Butter and Tomato Sauce

When you want an easy to make sauce that is velvety smooth for for fish or pasta.




BT's Rich Butter and Tomato Sauce


Ingredients:

1/4 cup of fruity olive oil

1/4 cup unsalted butter

1/4 teaspoon of peperoncino flakes or 1 fresh peperoncino

Large sprig fresh rosemary

Large sprig fresh thyme

Juice of one lemon

1 1/2 cups fresh tomatoes, diced

1/4 teaspoon sugar

Kosher salt

Fresh ground black pepper

Directions:

Add olive oil and butter to heavy gauge frying pan and place on medium low flame

When fat is hot, add peperoncino and cook for 1 minute

Lay rosemary and thyme in pan and turn heat to low.

Leave herbs in oil until they begin to lose color - 1-2 minutes

Remove herbs and discard

Turn heat up to medium

Add tomatoes and cook for 1 minute until they begin to break down

Add salt and sugar

Cook for 1 more minute

Remove pan from heat, add lemon juice and pepper to taste
